Cassell cucumber yogurt dip


16-oz. container Greek plain yogurt (store bought)

2 cloves garlic, minced

One-half tsp. salt

One-fourth tsp. ground black pepper

2 medium English cucumbers, unpeeled and diced

1 T. dry mint or 2 T. fresh mint, chopped

2 T. extra-virgin olive oil


Mix all ingredients together. Refrigerate until ready to serve. Enjoy with your favorite fresh, raw vegetables.

Yields 2 cups.
